Greek Green Salad: This is an easy recipe for a basic Greek salad. If you want a bit more flavor, you can buy a bottle of Greek salad dressing. Be sure to serve this salad with some nice crusty bread!

Ingredient list for Greek Green Salad
1 cucumber, washed and sliced
4 medium tomatoes, washed and quartered
1 small head of lettuce, washed and leaves torn (use any lettuce that you like)
1 onion, peeled and sliced
Chunks of feta cheese (as much as you want)
Black olives, pitted (preferably Kalamata olives)
2 tablespoons extra virgin olive oil
2 tablespoons vinegar
2 teaspoons dried oregano
salt and pepper

Put the cucumber, tomatoes, onions and lettuce in a bowl. Mix the vinegar and oil and pour it over the salad. Season with salt, pepper and oregano and toss. Add feta cheese and olives.

Green Salad With Asparagus and Peas: This is a Scandinavian salad that tastes a whole lot better than you might think! This is a great salad for vegetarians.

Ingredient list for Green Salad With Asparagus and Peas
2 teaspoons freshly grated lemon zest
1/4 cup lemon juice
1/4 cup canola oil or extra virgin olive oil
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 heads bibb type lettuce, torn into bite size pieces
2 cups very thinly sliced fresh asparagus
2 cups shelled fresh peas (you can use thawed frozen peas)
1 pint grape tomatoes cut into halves
2 tablespoons minced chives or green onions

Combine the lemon zest, lemon juice, oil, sugar, salt and pepper in a large salad bowl. Add the lettuce, asparagus, peas, tomatoes and chives. Toss to coat. That’s all there is to it!

Green Salad With Lime, Green Apples and Almonds: This is a green salad that just screams summer! This is a family favorite and it’s a big hit for any party or barbecue.

Ingredient list for Green Salad With Lime, Green Apples and Almonds
1 head iceberg lettuce, shredded
2 tablespoons canola oil or olive oil
3 tablespoons lime juice
2 tablespoons honey
3 granny smith apples cut into very small cubes (leave the peelings on for color)
1/2 cup to 1 cup almonds (slivered or chopped)

Mix all the ingredients in a salad bowl and serve. Cutting and adding the green apple cubes after adding the lime juice to the salad will prevent them from going brown.
