4 Tasty Egg Recipes: Simple and Delicious Meals

Incorporating eggs into your diet is a wonderful way to stay healthy because of all the great benefits they provide like preventing heart disease and blood clots. They are also great because there are many ways to cook eggs. For example they can be boiled, fried, poached or scrambled. Luckily, eggs can be easily found in many households and are commonly used in breakfast and as additions to various recipes. It is easy to cook eggs with some items that are found in the fridge. Here are a few recipes that are easy to make and taste great.

Quiche

What you’ll need:
6 eggs
1 cup spinach
1 pie crust (store bought)
½ cup diced red peppers
½ cup diced onions
4 tbsp nutmeg
1/3 cup milk

Directions:

• Preheat oven to 375° F.

• Beat eggs together with milk, nutmeg, red peppers, and onions.

• Pour egg mixture into pie crust and bake for 25 minutes.

Mexican-Style Scrambled Eggs

What you’ll need:
4 eggs
¼ cup milk
¼ tsp salt
¼ tsp black pepper
1 tbsp butter
1 tsp chopped jalapeño pepper
¼ cooked corn
¼ cooked and crumbled sausage (chorizo sausage alternatively)
2 tbsp salsa

Directions:

• Beat together eggs, milk, salt, pepper, corn, chopped peppers, and sausage in a bowl.

• Melt butter in pan over medium heat and then add egg mixture.

• Begin to scramble eggs by consistently stirring and scraping cooked eggs off bottom of the pot. Continue to scramble eggs until cooked.

• Stir in the salsa and serve.

Egg Foo Yung with Chinese Vegetables

What you’ll need:
6 eggs
3 tbsp chopped green onions
¼ tsp salt
¼ tsp black pepper
1 tbsp vegetable oil
2 cups frozen vegetables
2 tbsp soy sauce

Directions:

• Preheat oven to 350° F

• Beat eggs together with green onion, salt and black pepper.

Heat oil in an ovenproof skillet over medium heat. Add vegetables and stir-fry until soft. Add soy sauce.

• Pour eggs over the vegetables and transfer to oven and bake for 15 minutes.

• Cut into desired portions and serve.

Eggs Rancheros with Black Bean Sauce

What you’ll need:
1 tbsp vegetable oil
½ cup diced onion
1 tsp minced garlic
½ ground cumin
½ salt
¼ black pepper
1 can black beans
½ salsa
1 cup shredded Monterey Jack Cheese
4 tortillas
8 poached eggs

Directions:

• To poach eggs, boil about 2 inches of lightly salted water and then reduce heat. Crack each egg one by one into a measuring cup and then slowly pour egg into water. Cook for about 3 to 4 minutes. Use a slotted spoon to remove poached eggs from water.

• Heat oil over medium heat in a skillet, add onion and cook until tender.

• Next, add cumin, garlic and black pepper and cook for about a minute.

• Add black beans and salsa and then bring to a boil. Add cheese and stir until melted.

• Spread the bean mixture over the tortillas and add 2 poached eggs on top of each tortilla.
